Why does the job exist?

 
This position will directly supervise assigned Cooks and Food Service Workers.  The incumbent will organize, plan and supervise the pre-preparation, the preparation and delivery of food serivces to residents, staff and guests.  The incumbent may be required to prepare menus, food budgets and food requisitions, and act as quality assurance officer to ensure compliance in accordance with Food and Drug Administration Food Code and New Mexico Environment Department Food Service and Processor Regulations.

How does it get done?

 
Devotes a substantial portion of time assigning and directly supervising staff, acts upon leave requests, conducts annual performance evaluations and recommends disciplinary actions.
Conducts training of personnel; may interview and recommend selection of applicants.
Prepares menus, food budgets, and food requisitions.
Clean, cut, and cook meat, fish, or poultry. 
Cook foods according to menus, special dietary or nutritional restrictions, or numbers of portions to be served. 
Responsible for all aspects of food service operations in a facility.

Residents, Visitors and Employees at a long-term care facility.

Ideal Candidate

 
Must be able to read, write, speak, and understand the English language.
Must possess the ability to make independent decisions when circumstances warrant such action.
Must possess the ability to deal tactfully with personnel, residents, family members, visitors, government agencies/personnel and the general public.

Minimum Qualification

 
High School diploma or equivalent and three (3) months of directly related experience in food preparation. Any combination of education from an accredited college or university in a related field and/or direct experience in this occupation totaling three (3) months may substitute for the required experience.

Employment Requirements

 
Employment is subject to criminal background check pursuant to New Mexico Caregivers Criminal Screening Act and is conditional pending results. Must be able to read, write and comprehend the English language in order to read and understand recipes, therapeutic diets and warnings on cleaning products.

Working Conditions

 
Position will work in a kitchen and moves intermittently during working hours.
Works beyond normal duty hours, on weekends, and in other positions temporarily, when necessary.
Is subject to sudden temperature changes when entering refrigerator.
May be exposed to heat/cold temperatures in kitchen/storage area.

Must be able to push, pull, move, and/or lift a minimum of 25 pounds to a minimum height of 5 feet and be able to push, pull, move, and/or carry such weight a minimum distance of 50 feet.
Position may be required to work rotating shifts, weekends, overtime, and holidays.

State of New Mexico employees may be impacted by the Public Health Order dated December 19, 2022, which requires facilities licensed or certified by the Centers for Medicare and Medicaid Services (CMS), including all hospital types, long-term care facilities, nursing homes, hospice facilities and rehabilitation facilities, as well as assisted living facilities and adult day care settings, to adhere to all COVID-related requirements prescribed by CMS, including, but not limited to masking and staff vaccination.
